(mentioned on p.32) Easy Burger variations and ideas

Basic Burger recipe:

1 can pinto or black beans, drained and mashed

¼ C cooked grain (rice or quinoa)

1/3 C oats

1 Tbsp mustard

2 Tbsp ketchup

1 tsp onion powder

1 tsp garlic powder

· If you don’t have cooked grains laying around, don’t sweat it. Just use more oats for a similar burger-like consistency (mashing and mixing and forming the patties with your hands helps here)

· Add ¼-1/2 C cooked, mashed sweet potato

· Add ¼ C chopped walnuts

· Add ¼-1 C finely chopped greens (kale, chard, or spinach)

· Add ¼ C chopped onion instead of onion powder

· Add some canned green chilies, some finely chopped red pepper, some corn kernels, ¼ tsp cumin and ¼ tsp chili seasoning for a southwest burger flavor

· Caramelize some onions (cut thin slices of onion, place in pan with no oil on medium heat, when they start to stick add a tablespoon of water at a time until they brown) and mushrooms if you’d like, and put on the basic burgers along with fresh avocado slices

· Add 2 Tbsp ground flaxseed (will help act as a binding agent)
