(mentioned on p.43) HAPPY peanut butter balls
1 C peanut butter
½-3/4 C honey
1/2 C oats (or 1 Tbsp ground flaxseeds/flaxseed meal with ¼-1/2 C sesame seeds)
1 tsp vanilla extract
Pinch of salt
(optional: chocolate chips, goji berries, shredded coconut, raw sunflower seeds, cocoa powder)
Mix peanut butter and honey together well. Then add oats (or flaxseed and sesame seeds), vanilla and salt (and any optional add-in’s). Mix, then roll into balls by hand. Roll in coconut, sunflower seeds or cocoa powder if desired. Chill in refrigerator, or freeze.
