Black Bean Brownies
2 Tbsp ground flaxseed, mixed with 6 Tbsp warm water
1 15 oz can black beans, drained and rinsed (about 1 ¾ C black beans)
3 Tbsp applesauce
1/2 C cocoa powder
¼ tsp salt
1 tsp pure vanilla extract
½ C sugar
1 ½ tsp baking powder
½ C dairy-free semisweet chocolate chips
(Optional add in’s: ½ C nuts such as walnuts, pecans or peanuts, ½ C almond butter or peanut butter. During the holidays, we’ll add a splash of peppermint extract to the mix and top with crushed candy cane)
Preheat oven to 350
In food processor or Vitamix, blend all ingredients but chocolate chips. Once creamy and smooth, stir in the chocolate chips. Pour into parchment paper lined or silicone (or greased) 8×8 pan. Bake 22-25 minutes, or until a toothpick comes out clean. They will be fudgy and moist
